Can it also cut the heating if it gets too hot?Yes. It works on a threshold: below the set temperature the heater turns on, above it the heater switches off automatically, avoiding heat spikes that harm your plants.
Where should I place the temperature probe?Position the probe at canopy height, away from the direct heat flow and from light, so it measures the temperature your plants actually experience.
